- 1.5 cup sprouted moth beans matki sprouts
- 1 tsp cumin seeds
- pinch of asafoetida (optional, avoid if gluten-free)
- 2-3 stalks green onions / 1 small onion chopped
- 1-2 green chilies optional
- 1.5 cups water
Spice mix
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tbsp. coriander powder
- 1 tsp goda masala / garam masala or as per taste
- salt as per taste
Wash the sprouted beans in a sieve, to ensure there is no bad smell. Discard if there is a rancid smell.
Heat oil in a pan, add cumin seeds,chillies(optional). Add green onions, cook for 3-4 minutes. You can also add 1 tbsp. garlic ginger paste or some grated ginger at this stage.
Add the chopped tomatoes to the pan along with some salt. Let it soften.
Add turmeric powder, red chili powder / paprika, coriander powder and goda masala and mix well. Cover and cook for 5-6 minutes on low flame.
Now, add sprouts and mix well.
Add 1.5 cups of water and cook for 10 minutes or until the sprouts soften. Turn off the gas,garnish with fresh coriander. Adjust salt as per taste.
