Equipment

Ingredients

  • 1.5 cup sprouted moth beans matki sprouts
  • 1 tsp cumin seeds
  • pinch of asafoetida (optional, avoid if gluten-free)
  • 2-3 stalks green onions / 1 small onion chopped
  • 1-2 green chilies optional
  • 1.5 cups water

Spice mix

  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tbsp. coriander powder
  • 1 tsp goda masala / garam masala or as per taste
  • salt as per taste

Instructions

  • Wash the sprouted beans in a sieve, to ensure there is no bad smell. Discard if there is a rancid smell.
  • Heat oil in a pan, add cumin seeds,chillies(optional). Add green onions, cook for 3-4 minutes. You can also add 1 tbsp. garlic ginger paste or some grated ginger at this stage.
  • Add the chopped tomatoes to the pan along with some salt. Let it soften.
  • Add turmeric powder, red chili powder / paprika, coriander powder and goda masala and mix well. Cover and cook for 5-6 minutes on low flame.
  • Now, add sprouts and mix well.
  • Add 1.5 cups of water and cook for 10 minutes or until the sprouts soften. Turn off the gas,garnish with fresh coriander. Adjust salt as per taste.
