You can add basic Indian spices like garam masala powder or chaat masala, amchur powder (dry mango powder) if you like complex flavor. Otherwise just cook it with turmeric powder and red chili powder. Optionally garnish with coriander leaves. You can store this Indian stir fry recipe for 2-3 days in fridge in an airtight container. Serve it with dal tadka / masoor dal and plain rice or jeera rice or any Indian bread. I even love eating this vegetable dish with some plain sandwich bread.
